Cooking tips
Cut into thick steaks and braise with ginger, garlic, chilli and soy until the sauce reduces; or pat dry and pan-fry both sides for a crisp outside and tender centre. The flesh also makes superb fish dumpling filling.
Storage
Store at -18°C or below and never refreeze after thawing. Defrost in the refrigerator and cook immediately.
